Light vs. Medium vs. Dark Roast: What's the Difference?
Share
If you've ever stood in front of a wall of coffee bags wondering what the difference between light, medium, and dark roast actually is — you're not alone. Roast level is one of the most misunderstood aspects of coffee, and getting it right can completely transform your morning cup.
At Forged Under Pressure, we small-batch roast across all three levels, so we know a thing or two about what makes each one special. Here's your no-nonsense guide.
What Does Roast Level Actually Mean?
Roast level refers to how long and at what temperature coffee beans are roasted. The longer the roast, the darker the bean — and the more the roasting process itself influences the flavor, rather than the bean's natural origin characteristics.
Think of it this way: light roast lets the bean speak. Dark roast lets the roaster speak.
Light Roast Coffee
Light roasts are roasted for the shortest time, reaching internal temperatures of around 356–401°F. The beans retain more of their original character — the soil, altitude, and climate of where they were grown.
What to expect:
- Bright, vibrant, and complex flavors
- Higher acidity (think fruity or floral notes)
- Lighter body
- Contrary to popular belief — more caffeine than dark roast
Best for: Pour-over, drip coffee, anyone who loves nuanced, origin-forward flavors.
Try our Light Roast Coffee collection to experience the difference.
Medium Roast Coffee
Medium roasts hit the sweet spot — roasted longer than light but not as long as dark, typically reaching 410–428°F. You get a balance of origin character and roast-developed flavor.
What to expect:
- Balanced flavor — not too bright, not too bold
- Medium body and moderate acidity
- Smooth, approachable, and crowd-pleasing
- Notes of caramel, nuts, or chocolate
Best for: Drip coffee, French press, everyday drinking. The most versatile roast level.

Dark Roast Coffee
Dark roasts are taken to 437–482°F, where the roasting process dominates. The bean's origin flavors take a back seat to bold, roast-forward characteristics.
What to expect:
- Bold, rich, and full-bodied
- Low acidity
- Deep, smoky, or bittersweet notes
- Less caffeine than lighter roasts (the roasting process breaks down caffeine)
Best for: Espresso, cold brew, French press, anyone who wants a strong, no-nonsense cup.
